Edible Mulch For The Garden

Why use herbs as a groundcover?
We all know how important mulch is to the garden. It protects the soil against water erosion, reduces weeds, and holds in moisture.
All of which protect our pockets because the seeds are happy, so they germinate. Weeds are no longer the problem they once were, so our young plants can grow strong and produce fruit, while the extra moisture keeps our water bill low.
Not to mention mulch is organic and aids in keeping the soil healthy. That’s where edible mulch, like herbs, come into play.
Using edible herbs for groundcover is an effective way to keep soil covered and increase the bounty of the garden.
Using low growing herbs in your garden also helps to keep pollinators around and provides fresh herbs for cooking.

Corsican mint
Corsican mint is a low growing plant that grows by creeping and forming mounds of tiny leaves and produces purple flowers in early summer. Delicious in teas and other beverages, this mint is great when planted in shady spots around the garden. The great aroma adds a sweet minty fragrant that makes working around the garden a pleasure. However, it does not stand up well to foot traffic.

Thyme
Thyme has dark evergreen leaves and produces small purple flowers that bloom in spring and summer. The beauty alone makes it worth growing, but when you think of the layers of flavor thyme adds to soup, stews, and beverages it a living mulch all gardener should consider.

Marjoram
Marjoram is used in a lot of Mediterranean dishes and is best when used fresh. Yet it’s also a wonderful ground cover because of its compact oval green leaves.

Rosemary
Rosemary is a woody evergreen, that provides fragrant leaves for use in cooking, and nectar-rich flowers for bees in spring. It’s also very easy to propagate.
